Whiskey Barrel Aged Double Pecan Porter 2024 – Balcones Bourbon Barrels

(512) WBADPP 2024 classic is a double robust porter accented by organic Texas grown roasted pecans and subtly enhanced by aging in recently emptied Balcones Bourbon barrels for three months. Notes of chocolate, coffee and pecan marry with the subtle flavors of vanilla and whiskey to make this a wonderful warmer worth savoring.

(512) Cold IPA

(512) Cold IPA is a blend of two of our favorite styles, the lightness of a rice lager with the character of an IPA. Cold fermentation and lager yeast meet some exciting hops like Paradigm and Cashmere for a light refreshing hoppy creation. Enjoy

Cherry Limeade Sour

Cherry Limeade Sour is a blend of a dry Brett beer and a wild ale aged in wine barrels for at least 2 years. With added lime juice, lime zest, Himalayan pink salt, and finished with cherries, through aging, sour notes have surfaced to create a complex, yet delicate concoction! Enjoy

Ultimus – Weizenbock

Bold and rich in all aspects, this unfiltered German wheat beer is fermented with a classic Bavarian yeast strain that imparts notes of banana and clove, intricately meshing with chocolate, toffee and caramel notes stemming from the copious amounts of dark malts, creating a complex melange of harmonious goodness.

Altstadt Hefe – South German-style Hefeweizen

We brew this “liquid bread” with a rare, old world method using open fermentation vessels. This unique process gives our unfiltered beer very distinctive aromas and flavors of clove and banana with a hazy, golden pale appearance. The low hop character is designed to let the yeast and wheat malt really shine through. A true South German-style Hefeweizen… brewed a lot closer to home!

Or’Val Peck – Belgian Style Pale Ale with Brett

Or’Val Peck is our attempt to recreate the classic Belgian Trappist Ale with that characteristic Brett yeast flavor. You know the one. We put a sort of Southwestern twist on it with the use of Texas grown heritage barley and a newer Neomexicanus variety of hops, Zappa. Fermented with the special Valor Blend of Sacc and Brett from Escarpment labs in Ontario. Alongside the use of French Elixir hops in the dry hop, we think the resulting liquid is complex, but dry, with an unmistakable funky passion fruit flavor. Giddy up!

Batch Pilz – Czech Premium Pale Lager

Batch Pilz is brewed with Czech Pilsen barley, Czech lager yeast, Czech Saaz and Cryo Saaz and three different Cara malts to evoke the truest Czech lager flavor we could possibly obtain. Always on tap at Batch!

1:30 Rotating Tap: Kolache Bier: Montmorency Cherry

Kolache Bier: Cherry is our Cherry Kolache in liquid form. Brewed with ingredients used in baking kolaches (barely, wheat, oats), fermented with Philly Sour yeast with Montmorency juice added. Contains a little lactose to emulate our sweet cheese topping. Behold! The kind of sour fruit beer that you could drink a liter of no sweat!

All aboard the SS Dreamboat, where your wildest dreams come true! We combined the classic flavor pairing of orange sherbert and vanilla ice cream and created this deliciously creamy, hazy IPA.

TexMex Lager

This light-bodied lager expresses the marriage of Latin and Central European cultures and the rich and unique history of our region. A crisp, dry lager is given the Texas treatment by adding a touch of sweetness from malted maize and subtle spice from Tettnang and Saaz hops. No addition of salt or lime needed, but never discouraged.

Mountaineering Mount Mansfield? Repelling the Presidential Range? Zip open the tent and take in the cool, brisk air with this generously-hopped Hazy IPA. Luker – Czech Style Pilsner

Our Czech style Pilsner, brewed to ultra high standards for a premium lager drinking experience. Mashed using heirloom pilsner malt, floor malted in the Czech Republic. Utilizing natural sour wort for all pH adjustments. Hopped early during the lauter, and throughout the boil with high quality Saaz hops. Fermented cold with our house lager yeast, low and slow. 100% natural carbonation. Lagered in our horizontal tanks for 8 weeks. This is a full & well-rounded fresh Pilsner beer, capturing the perfect clash of soft malt richness and a crisp floral saaz hop finish that keeps you wanting that next sip.

Matamata – NZ Hazy IPA

Our house NZ hopped hazy IPA. We utilize Texmalt Pale Malt, oats, and a touch of rye. Hopped solely with Freestyle Hops NZ grown cascade in the whirlpool. Then dry hopped heavily towards the end of fermentation with Freestyle Hops; Nelson, Waimea, Peacharine, and some CGX Cryo Riwaka from our friends at Crosby Hops. This comes together for an explosion of pineapple, citrus, dank grape, orange blossom. This batch is coming in at 6.6% with an incredibly soft finish, lending to massive drinkability, a constant that we strive to achieve with all of our beers.

3:00 Rotating Tap: Coconilla Stout – Imperial / Double Pastry

A massive coconut/vanilla imperial stout conditioned on copious amounts of ultra high quality vanilla beans sourced from Tanzania (Kilimanjaro), Congo, and Madagascar. All very coveted Vanilla Beans direct from small family farms. We then rack this big vanilla stout on top of a blend of both raw and toasted Coconut for an extra push towards ultimate decadence.

Prairie Fire – Irish Red

Classic Irish Red. Moderate malt character with a pleasant light hoppiness. We add 50lbs of potatoes to the mash to give un undertone of earthiness and body to the beer.

South African Rooibos – Brown Ale

An English brown ale made with a healthy addition of South Afircan Rooibos tea which adds some vanilla notes and light tannic character.

This is a classic American light lager with low bitterness, smooth malt character and a clean crisp finish.

Not The Island – Hefeweizen

Brewed right here on Galveston Bay, this hefeweizen features pilsner malt, white wheat, red wheat, and hallertauer hops. Full-bodied with notes of banana and clove. This beer also comes with a geography lesson! Galveston Bay is the calm, sheltered estuary rich with marine life found just north of the vibrant seaside city of Galveston Island. Wherever you may hail from, just remember, it’s always fun to play where the island meets the bay.

Neighborwood – Foeder-aged Farmhouse Ale

This is the latest batch from our Foeder-based Solera program. Extended time in oak with a mixed culture yields an ultra-dry, slightly funky, and bright farmhouse beer.

Horchata Blonde – Spiced Blonde Ale

To mimic its namesake, this beer was brewed with rice and lactose sugar and then conditioned on Madagascar vanilla beans and Cassia cinnamon sticks. Decadent yet drinkable!

5:30pm Rotating Tap: Moving to the Country – BA Wild Sour w/ Peach and Ginger

Aged over a year in a wine barrel with a “wild culture” and then re-fermented on fresh Fredericksburg peaches and conditioned on ginger. Fruity-Spicy-Funky!

A wonderfully intricate delight, Waterloo boasts a deep ruby-mahogany hue and offers flavors of raisins, caramel sweetness, and tangy dark fruits. Its smooth, luscious body melts into a lingering dry finish. Topped with a firm, silky off-white head, it releases a rich blend of toffee, honey, caramel, and phenolic aromas.

Dominguitos Nocturna – Amber Lager

As night is to day, so to with Nocturna & Dominguitos. After years of brewing a successful Mexican-Style lager, we knew it was time to introduce a sibling beer, one with the depth and complexity that is well suited to a fine sipping experience, but a light enough body to accommodate a more timid palate. Brewed with Colorado grown Vienna, Munich & Chocolate malts, and a hefty dose of corn grits to finish the bill, Nocturna is a careful balance of rich malt character, with a finish that is light enough to leave you yearning for another pint.

We recently got together with our Orange County, CA based buds at Green Cheek to brew our own rendition of their beloved West Coast IPA Is Dead.This modern West Coast IPA was brewed with 100% Weyermann pilsner malts creating a clean, clear canvass to showcase some primo lots of Citra, Simcoe & Mosaic. Weโ€™ve fermented this delicately dank, lightly bitter and tropically charged IPA with clean California Ale yeast strain for maximum levels of crushability.

Itโ€™s back! Time to say goodbye to Summer, and introduce the cooler months of Fall with a classic stout. This revamped beer has a new recipe, leaving out lactose and containing 100% real ingredients that include Virginia Peanuts, Roasted Cacao Nibs, Premium Caramel, & Mediterranean Sea Salt. The result is a double stout packed to the brim with aroma and flavor reminiscent of a Snickers bar. No tricks here. Only treats.

2:30pm Rotating Tap: Poptart Ravioli – Kettle Sour Milkshake IPA

Pop Tarts are Ravioli, change my mind! We started off with a protein rich malt base, and we threw in 75 lbs. of everyone’s childhood favorite toaster pastries; right off the shelf and in with the grain. Post boil, we added a heavy dose bright and fruity whirlpool hops along with a triple dose of lactose sugar for a full and creamy body. A ridiculous blueberry puree post fermentation creates a smoothie like consistency. This bright, fruity, and delicious treat won’t be around long, just like a box of Pop Tarts in the pantry.

Art Car IPA

Art Car IPA is an American IPA featuring a blend of both new and old hop varieties from the Pacific Northwest. The nose is a blend of apricot and tropical fruit and mango. The taste starts with a big bitter blood orange that morphs into mangos and sweet tropical fruits. There is a lightly sweet malt body that allows the hops to shine while maintaining a nice complexity to the flavors.

Eclipse IPA

Brewed with Eclipse hops from Australia and Citra hops from the Pacific Northwest, Eclipse IPA features tropical fruit notes of mango and pineapple with juicy stone fruit notes of peach and apricot. This citrusy, bright, and mildly bitter IPA is a sight to behold.

Citrus Shandy – Lemon & Grapefruit Shandy

As a pale lager mixed with a grapefruit and lemonade soda, the aroma of Citrus Shandy presents itself with a citrus burst of grapefruit and lemon, with a slight floral note. Its flavors of grapefruit and lemon play perfectly with its subtle notes of a light, refreshing beer. Itโ€™s beer with a twist!

2024 Pumpkinator – Imperial Pumpkin Stout

Pumpkinator is a big, black, full of spice, full of flavor beer. Originally released in 2009 as Divine Reserve No. 9, it is an imperial pumpkin stout and our answer to how a pumpkin beer ought to taste. It is brewed with a combination of pale two row, caramel and black malts, Cascade and Liberty hops for a background hop flavor, pumpkin for a rich mouthfeel, molasses, brown sugar, spices and dry-spiced to make it feel like you just walked into your momโ€™s kitchen while she was cooking 37 pumpkin pies. It is the most expensive beer we have brewed.

2013 Pumpkinator – Imperial Pumpkin Stout

It’s Pumpkinator but the 2013 version that was hiding deep within the cavernous recesses of our cellar.

2020 Russian Imperial Stout

Our Russian Imperial Stout has a rich malty body full of coffee and chocolate flavors and a spiciness derived from the combination hops and high alcohol. It was brewed with a variety of malts including 2 row pale, crystal, chocolate and roasted barley. It was hopped with Nugget, Willamette and Centennial. We used our Saint Arnold yeast to ferment it. It is unfiltered.

5:30pm Rotating Tap: Bourbon Barrel Commitment with Coffee – Barrel Aged Imperial Stout with Coffee

Aging our Commitment Imperial Stout in a blend of whiskey barrels for well over a year created a grandiose beer in all aspects. Showcasing notes of rich figs, fresh vanilla, ripe strawberries, toasted oak, and dark chocolate, this beer weilds a dense, silky texture that softly grips the pallet. Yet even with such bold flavors, it is remarkably balanced and drinkable, making this beer a suitable toast to a special occasion.

Showcasing some of the archetypal hops found in a West Coast IPA (Simcoe, Citra, Mosaic, and Nelson Sauvin) West displays a clean bitterness that is counterbalanced by a soft, sweetbread malt character โ€“ but still finished bone dry. This beer unites a highly aromatic hop expression of zesty lemon peel, an array of pulpy citrus and tropical fruit, resinous pine, and orange pixy sticks โ€“ full-flavored yet approachable on every level.

Hazy – Hazy IPA

Over the years, St Elmo has brewed dozens of different Hazy IPAs. This HAZY is the culmination of years of that work in making a pillowy, drinkable IPA that delivers a fruit salad of flavor and aroma. The brewers get strong pineapple, mango and orange pith from every sip of HAZY.

5:00pm Rotating Tap: Baby – Cognac Bourbon Barrel-Aged Barleywine

Baby is a rich, decadent beer that shows its depth upon first sip. As it warms, new flavors develop and the nuances of the barrel (and previous spirits aged within) can be further appreciated. Itโ€™s said that barrel-aged barleywine stands the test of time more than any other beer style, so we encourage those who purchase bottles to cellar a few so that they may develop and refine over time. To simplify: French Cognac โ†’ Stillโ€™s Bourbon โ†’ St Elmoโ€™s Barleywine 17-months.

Figures of Light – India Pale Ale

This easy-drinking IPA is brewed with Citra Incognito, Strata, and Idaho 7, then dry hopped with El Dorado, Chinook, and more Strata. Juicy and fruit-forward while maintaining an easy bitterness, this IPA is made for everyday enjoyment. Notes of ripe nectarine, orange peel, peach rings, and a dank, cannabis-like finish make this an illuminating choice.

4:00pm Rotating Tap: Procession – Pear Brandy Barrel-aged Saison w/ Pear, Lemon, Rosemary, and Thyme

This foeder fermented farmhouse saison was aged for 30 months in French oak pear brandy barrels with our house mixed culture, then refermented with fresh pear and conditioned with lemon, rosemary, and thyme. Beautifully aromatic with bright and zesty accents and a pleasingly herbal finish.

Driftwood

Dark Skies – Black Pilsner

Dark Skies is a light-bodied black lager with hints of coffee and toasted marshmallow. In the glass, it appears robust, but is deceivingly light and drinkable. Youโ€™ll get all of the dark and roasty flavors of a dark beer with a dry, refreshing light body and under 5.0% abv. A great year-round beer! We named this beer in honor of International Dark Sky Association, an organization which combats light pollution. With this beer, weโ€™re celebrating the beauty of the nighttime skies of the Texas Hill Country, and keeping the stars at night big and bright over Driftwood.

Killer V’s – Honey Lager

Killer V’s is a collaboration inspired by this very festival! Given the alphabetical order placement of breweries, each year we are set up next to Vacancy and Vector. Aren’t we lucky to get to enjoy some of the best beers at the festival as our neighbors!! We’ve been talking for a few years about a collab brew to release at this fest…and the name Killer V’s inspired the addition of Texas wildflower honey in the recipe. Clean and crisp, with a touch of floral honey…exactly what we want to drink on fest day!!

4:30pm Rotating Tap: Zenith – Oak-Aged Petit Saison

This easy-drinking farmhouse ale is a collab with our friends and fellow star gazers at True Anomaly Brewing Company, we came up with a recipe inspired by our love of farmhouse ales, starry nights, and aging with oak barrels. It delivers delicate flavors of white wine, lemon, mineral, and light oak tannins. Rustic and lightly tart, this grisette aged in French oak for six months until it reached the peak (the zenith!) of flavors produced by the house culture from True Anomaly.

Landa Park Pils – German Style Pilsner

Landa Park Pils, a classic German pilsner crafted to perfection. Brewed with the finest German Pilsner malt and Hallertau Mittelfrรผh hops, this crisp, clean beer offers a refreshing experience, ideal for the Texas heat. With its delicate floral aroma and balanced bitterness, Landa Park Pils (4.8% ABV) is your go-to brew for those sunny days. Enjoy the timeless taste of tradition with every sip.

Safety Meeting – Hazy IPA

Safety Meeting is a 6.3% abv balanced and drinkable Hazy IPA that features Equinox, Galaxy, Azacca, and Citra hops. With bright flavors of tropical fruit with notes of melon, guava, orange and is balanced with a touch of floral and pine. The the use of oats and wheat gives this beer the malt backbone to hold up to the juicy hops.

Porch Viking – Hazy IPA

Tropical sea breezes, light pineapple notes mixed with a sweetness and a bit of saltiness.

Blacks Bock

The nose reminds a bit of corn tortillas from abuela’s kitchen. The initial taste is a slight smoke with a hit of slightly toasty malt. The finish is sweet and clean.

Smoking Jacket: Campfire Edition – Rye Marzen | Hold Out Brewing

Contains a little lactose to emulate our sweet cheese topping. Behold! The kind of sour fruit beer that you could drink a liter of no sweat!

Nutty by Nature with Mexican Chocolate | The Brewtorium Brewery & Kitchen

A hearty, roasty oatmeal stout with prominent notes of peanut butter, chocolate & coffee plus Mexican chocolate, chiles and spices.

Poptart Ravioli – Kettle Sour Milkshake IPA | Red Horn Brewing Co.

Pop Tarts are Ravioli, change my mind! We started off with a protein rich malt base, and we threw in 75 lbs. of everyone’s childhood favorite toaster pastries; right off the shelf and in with the grain. Post boil, we added a heavy dose bright and fruity whirlpool hops along with a triple dose of lactose sugar for a full and creamy body. A ridiculous blueberry puree post fermentation creates a smoothie like consistency. This bright, fruity, and delicious treat won’t be around long, just like a box of Pop Tarts in the pantry.

Ingrained Series #6 – BA Belgian Quad | Spindletap Brewery

Aged in LedgeRock Bourbon barrels. Amber to dark brown in appearance with aromas of dark sugar, figs, and light spice. Drinks malty sweet with notes of dried fruits and a crisp, dry, warm finish.

Lunch Box – PB&J Smoothie Sour Ale | Blue Owl Brewing

Lunch Box is a delectable PB&J Smoothie Sour Ale that’s redefining the lunch break experience. A massive coconut/vanilla imperial stout conditioned on copious amounts of ultra high quality vanilla beans sourced from Tanzania (Kilimanjaro), Congo, and Madagascar. All very coveted Vanilla Beans direct from small family farms. We then rack this big vanilla stout on top of a blend of both raw and toasted Coconut for an extra push towards ultimate decadence.

This initiative is an industry effort to raise funds for those affected by the forest fires and flooding that occurred in the village over the summer season. Breweries across the region, including many in El Paso, made their own โ€œCollective Good Beerโ€ and the proceeds from the sales go to the Community Foundation of Lincoln County. Pease Pilsner is a collaborative Pilsner with all of the grain being donated from Country Malt Group with the goal of raising funds for the upkeep of our iconic ATX Pease Park. This Multi Continental Pilsner includes German, Czech, and Canadian Pilsner malt, old-school German, Czech, American, and French hops, and Czech/German lager yeast. A global mix that this a very pilsner-flavored pilsner!

Hive Mind – Honey Ale | Vista Brewing, Community Cultures Yeast Lab & Central Texas Beekeepers

The fourth iteration of our award-winning honey ale is a true collaboration brew, using honey donated by Central Texas Beekeepers, each with a unique color and flavor depending on where the colonies were located. The wild yeast used was isolated from the back of a Vista honey bee. We worked with Community Cultures Yeast Lab to propagate this wild saccharomyces strain which produced light Belgian-like aromas and flavors. With a Pilsner and Honey Malt base, wild โ€œVista bee yeastโ€ and wildflower honey, this beer is a super dry and drinkable 7.7% abv with clove, vanilla, and โ€”of course โ€” honey flavors!

Brazilian Kasiri – Lager/Hybrid | Fitzhugh Brewing

A lager based on a traditional Brazilian beverage called a Kasiri. Often made by indigenous people in South America and Africa, women of the communities would chew cassava root in a manner similar to Chicha. The enzymes in their saliva would break the starch into sugar and the starchy liquid was then fermented and shared in the village. This drink was used in celebratory and religious ceremonies. Women in the villages were literally the gateway to talking with god. No chewing with our version, but still a good way to get right with the deity of your choice.
