Bring your own tortillas — this brew will do the rest of the work. We turned a regional staple, Al Pastor tacos, into a ridiculously delicious sour ale by dosing our Comes and Gose with achiote rub and puréed pineapples. 😮😍 🌮 Expect… Al Pastor. But expect it to be in the shape and form of a deliciously tart and deliciously savory pint of craft beer. You’re welcome, Texas.

Chamuco – Chili Chocolate Porter
Brewed with Chocolate, Vanilla, 3 different types of chili peppers and just a hint of Cinnamon. It’s not spicy but you will catch a hint of pleasant warmth at the end. Chamuco is made with pure cacao beans. Chamuco is a Spanish term for “devil” and is used to describe a mischievious person. It is a perfect name for this beer because it plays with your taste buds and tongue in so many different ways.

New Clear Fishin’ – Spontaneous
We brewed the wort in November 2018 with Blacklands Pale Moon and Brownfield 10 malted barley, spelt, rye, oats, East Kent Golding and Fuggle hops, heather, myrica gale, gentian root, and meadowsweet. We let the wort chill overnight in our coolship to collect native microflora before 100% spontaneous fermentation and two-year maturation in oak. Unfiltered, unpasteurized, and naturally conditioned.

The barrels are then sped over to our brewery and filled that day before the barrel has any chance to lose it’s true bourbon character. Vanilla. Whiskey. Maple. Caramel. Awesome.

Pumpkinator with Vanilla – Imperial Pumpkin Stout with Vanilla
Pumpkinator is a big, black, full of spice, full of flavor beer. Originally released in 2009 as Divine Reserve No. 9, it is an imperial pumpkin stout and our answer to how a pumpkin beer ought to taste. It is brewed with a combination of pale two row, caramel and black malts, Cascade and Liberty hops for a background hop flavor, pumpkin for a rich mouthfeel, molasses, brown sugar, spices and dry-spiced. This version has added vanilla bean!
