It pours a hazy, light gold beneath a bright white head. The aroma is zesty and citrusy, layered with the classic phenolic character of that heritage yeast, especially notes of clove. Light to medium in body, it drinks crisp and refreshing with a subtle creaminess that rounds out every sip. Timeless, bright, and unmistakably Celis.

A gentle malt backbone and a whisper of hops create a clean, refreshing finish that feels like a cool breeze on a Texas evening. Itสผs brewed for the moments that keep this city beating: the warmth of a tailgate crowd, the glow of backyard lights, and the magic of music floating across a warm night sky. Think of it as the unofficial soundtrack beer โ€” a companion to any memory worthy of an Austin City Limits encore.

Matamata – New Zealand Hazy IPA

MataMata is our love letter to New Zealand hops โ€” bright, lush, and just a little wild. The first sip rolls in like a soft ocean breeze: tropical mango and passionfruit, a glimmer of citrus zest, and that silky stone-fruit finish that lingers like fond memories of being in your happy place. Itสผs a Hazy IPA that doesnสผt shout, it invites. Think sunlit hills, sparkling coastlines, and the gentle thrill of stepping into someplace beautiful for the first time. One sip and youสผre miles away โ€” though technically still in Austin.

Hoppy Lager – Lager*

Hoppy Lager is inspired by the aroma-forward hoppy pilsners of Northern Italy. Pale in color, gentle malt character, soft bitterness, but elevated hop aroma. We dry hopped this beer (at a rate of 1.3lbs per bbl) with an American grown hop varietal called “Vista”, which shows characteristics similar to European Noble hops but is more expressive. Strawberry, peach, lime, and tarragon. A lot of flavor and aroma, but very drinkable! A hoppy beer for people who don’t like hoppy beer. Pour this beer with a nice 2โ€ cap of foam on top to really make the aroma pop.

Bockbier – Bock*

Bockbier is an ode to the classic dark-ish, malty and somewhat strong lagers of Lower Saxony / Northwest Germany. The focus here is on malt character, and despite a very simple grist, there is a lot of depth to explore in a beer like this. Deep reddish brown in color with a nice white/tan cap of foam. On the nose, stewed apricot / cherry strudel, rye bread, cinnamon, and alfalfa. On the palate, luxardo cherry, cola, tobacco, tootsie roll, bread crust, and dried fig. Reminiscent of sweet things, but not a sweet beer.

The Jabberwocky – Imperial IPA

Akin to the Jubjub bird and Bandersnatch, the Jabberwocky is strong, intimidating, and to be feared. However, once slain with a vorpal sword, it becomes an enticing well-balanced Imperial IPA. Hast thou slain the Jabberwocky? Tasting notes: Deep golden with a head made of hop resin; light malt breadiness hidden beneath an onslaught of pungent, hoppy, tropical fruitiness. Malt: Golden Promise and Pilsner Hops: Columbus and Citra Yeast: House

The hops impart strong grapefruit, pineapple, and blueberry flavor and aroma. This particular keg has an addition of passion fruit, that adds a sweeter, tropical flavor to the characteristic grapefruit-bomb. Malt: Pilsner Hops: Mosaic Yeast: House Addition: Passion Fruit

Half-Life – Hazy IPA

Half-Life is always a crowd favorite for both craft beer aficionados and those new to the beer scene. Soon to follow will be stone fruit and pine. But this is not a bitter IPA, friends. It is perfectly balanced with a focus on the delicious aroma. Wasteland approved, but undeniably sophisticatedโ€”Anemoia is a glimpse of what weโ€™re fighting to remember.

Stellarator – Neipa

Stellarator is a supercharged New England IPA built to survive the wasteland. Red Panda – Tripel

Red Panda is our take on the Belgian Tripel, brewed with orange blossom honey from our friends at Walker Honey Farm in Rogers, Texas. The honey ferments out almost completely, so what’s left isn’t sweetness but a soft floral, citrusy character that sits right on top of the classic Tripel yeast notes of clove, pepper, and pear. It pours a reddish amber, finishes dry, and drinks lighter than it has any right to, so pace yourself.

All Y’alls’ – Hazy IPA

All Y’alls’ is a hazy IPA that splits the difference between new school and old. It’s soft, juicy, and loaded with tropical fruit from Mosaic and Amarillo, but the late additions lean on the classics too: Cascade for grapefruit and citrus, Columbus for a little backbone, and a touch of Chinook for some pine. The result is a hazy that tastes like fruit without tasting like a smoothie, and stays easy to drink at 6.8%. One for all of y’all.

Padre Muldoon – Irish Red

This Irish priest became a familiar face in early Texas, helping settlers secure land and offering company along the way. His friendly nature made him just as memorable as his ministry. Padre Muldoon Red Ale is medium bodied with smooth caramel notes that keep it welcoming and balanced. Specialty grains give it the classic red hue that defines the style.

Bowler Hat – Black Imperial IPA

The Bowler Hat has gone from fashionable staple to the calling card of those who donโ€™t mind being a little different, and this beer embraces that same spirit. It mixes the comforting malt warmth of a stout or porter with the bright, punchy hops of an IPA. You wonโ€™t find any roasted coffee or dark chocolate hereโ€ฆ just smooth caramel and a touch of toasted malt. Bold pine, citrus, and fruit hops rise to the top, making sure every sip leaves its mark.
